Vegan Reese's Pieces | Vegan Cocoa Peanut Butter Cups

Yes, I am here again to give you another wondrous (healthier) chocolate orientated recipe! This is actually a recipe I originally found through a fitness blogger he follows, and I have seen a few variations of recipes go around. So I thought I would share my version that I find works best. Although these cups are each fairly calorie dense for their size, they are still a generally good indulgent treat to have sitting in your fridge ready for you when you are desperate for something incredibly sweet.
What's great about these cups of happiness is that they are a vegan version of the Reece's Pieces and have no refined sugar, and in our case, those are two wins. Mighail is lactose intolerant, and for me, I try to stay away from cows milk as much as possible, so even though we do not practise a strict Vegan lifestyle, we do appreciate vegan friendly recipes with little to no sugar and carbs!
WHAT YOU WILL NEED:
A muffin tin
Muffin cup liners
INGREDIENTS:
1/3 cup unsweetened, natural peanut butter or alternate nut butters if you'd prefer.
1/3 cup unsweetened raw cocoa powder
1/3 cup coconut oil
1/3 cup natural maple syrup / honey if you'd prefer
INSTRUCTIONS:
Line your muffin tin with 8 of the paper cup liners.
Melt the coconut oil in the microwave, ensuring it is smooth with no lumps.
Add the cocoa powder to the coconut oil and stir with a fork, again ensuring there are no lumps.
Pour the syrup into the melted mixture and stir well.
Pour about a tablespoon of the melted mixture into each cup. (The other half of the mixture will be used to top off your cups, so save it for then.)
Spoon a teaspoon of peanut butter into each cup (this will act as your peanut butter centre).
Then, top each cup off with your remaining melted mixture, covering as much of the peanut butter as possible.
Put the pan into the fridge and let sit for about 30 minutes. When ready to eat, just peel back the paper liner and you're ready to go!
*Just note that these cups will melt extremely fast, and can even start to melt in your fingers as you eat them, so keeping them in the fridge to store them will be the best way to keep them going for longer.
