LOW-CARB / KETO CHOCOLATE MUG CAKE (Easy 90 second microwave cake)

This recipe is one that is close to my heart, firstly, because anyone I have made it for is obsessed with it, and secondly, it is low-carb and made with sugar-free ingredients, making it a healthier treat option to curb that sugary desert craving. This Keto and Paleo friendly treat is a single serving desert that only requires about 90 seconds in the microwave.


I lead a Paleo lifestyle about 90 percent of my life (the other 10 percent is reserved for a sneaky baked treat every now and again). For those who aren't familiar with the low-carb diets such as Paleo, Banting, or Keto, essentially what it all is, is a diet that limits carbohydrates — such as those found in grains, starchy vegetables and fruit — and emphasizes foods high in protein and fat. Each low-carb diet is different in itself, and has varying restrictions on the types and amounts of carbohydrates you can eat.


With all this being said, the total carbohydrates in this single serve desert is only 6,5g net carbs, making it the perfect option for a low-carb desert! But, let me not bore you with too many details for now, and let's get into the fun part - throwing this easy cake together!


INGREDIENTS:

  • 1 egg

  • 2 tbsp Erythritol

  • 2 tbsp unsweetened almond / oat milk

  • 1 tbsp coconut oil (melted)

  • 1/2 tsp baking powder

  • 2 tbsp almond flour

  • 1 tbsp coconut flour

  • 1 tbsp unsweetened cocoa powder

  • 1 tbsp sugar-free chocolate chips

METHOD:

  1. In a medium-large sized ramekin or mug (ensure it is microwave safe and reasonably big, if you don't have a big mug that's similar in size to that of those large enamel coffee mugs, I would suggest you use a bowl), mix together the egg, erythritol, almond milk, oil and baking powder.

  2. Then stir in the almond flour, coconut flour, cocoa powder and chocolate chips.

  3. Microwave for 1 min, then burst for another 30 seconds (this is to ensure it doesn't bubble and rise over, which it will do if you just leave it in the microwave for 90 seconds straight and not watch it).

  4. Add some more chocolate chips, cream, or strawberries to the top for an extra special something! (optional of course). Enjoy!
